Burger Dive, a popular local burger establishment, is set to open a new location within the Rosedale Center in Roseville, Minnesota. This expansion marks a significant move from its current spot in the Potluck Food Hall, where it has operated for the past six years. The new restaurant will occupy the spaces previously held by Chipotle and Potbelly, offering a more accessible venue closer to the AMC Theaters and featuring its own exterior entrance.
“We’ve had great success at Potluck for the last six years and are excited to offer even more at our new location,” said Josh Thoma, one of the founders, in a recent news release. The restaurant is scheduled to open on January 12, 2024, and will accommodate up to 180 guests. The larger space will enable Burger Dive to expand its menu to include breakfast items and introduce features such as a pull tab booth, karaoke, trivia nights, and more.
The breakfast menu will feature popular dishes including omelettes, corned beef hash, country fried steak, and breakfast burritos, available until 5 p.m. daily. The full menu will be accessible starting at 8 a.m., ensuring a wide range of options for diners throughout the day. The interior design will reflect the brand’s identity, with wood paneling and neon beer signs creating a vibrant atmosphere.
In the meantime, the space within Potluck that was previously shared with Smack Shack will continue to operate as Smack Shack, although it will undergo an expansion of its menu to include additional appetizers, sandwiches, chicken wings, mac and cheese, and gourmet hot dogs.
The new Burger Dive will have operating hours from Sunday to Thursday, opening at 8 a.m. and closing at 11 p.m. On Fridays and Saturdays, the establishment will extend its hours, remaining open until midnight.
With this expansion, Burger Dive continues to solidify its presence in the local dining scene, building on its success at the Potluck Food Hall while enhancing the experience for its customers.
